Rosato is A Terra’s smallest lot. It belongs to Puglia’s long culture of pink wine while avoiding sweetness and cosmetic aromatics. Quantities are confidential and released by availability.

IN THE CELLAR
Low intervention, many decisions.
Two thirds of the fruit are destemmed and pressed immediately; the remaining third rests overnight as whole bunches in cold storage before pressing. Fermentation at 15–17°C for 10–15 days, light filtration and gentle bâtonnage in steel.
IN THE GLASS
Pale, crystalline pink. Wild rose, pomegranate and white peach. Crisp on entry, more structured through the mid-palate, with a clean mineral finish.
Ageing on fine lees with regular, gentle bâtonnage builds texture and helps protect the wine naturally from oxidation.
Serve at 9–11°C, not ice-cold. The wine gains detail as it opens in the glass.
AT THE TABLE
How to serve and pair it
With raw seafood, focaccia barese, tomatoes, grilled vegetables and Mediterranean cooking. Serve cool, not ice-cold.
