A precise reading of Puglia.

Nero di Troia is one of Puglia’s important indigenous grapes. It brings tannin, acidity and a naturally more austere profile than Primitivo. A Terra keeps its depth without letting it become heavy.

IN THE CELLAR

Low intervention, many decisions.

Fermentation begins at 18°C and rises gradually to 26°C to accompany the grape’s natural structure. Malolactic fermentation is completed, followed by light pad filtration and ageing exclusively in stainless steel.

IN THE GLASS

Deep garnet with violet hues. Black cherry, blackberry, violet, liquorice and black pepper. Present yet integrated tannin, vivid acidity and a long finish.

2024 technical reference: 13.5% abv, 6 g/L total acidity, pH 3.5 and residual sugar below 2 g/L.

Serving

Serve at 15–17°C. With structured dishes it can benefit from 30 minutes in a carafe.

How to serve and pair it

Made for savoury food: lamb, pulses, mushrooms, baked pasta and hard cheese. Serve at cool cellar temperature.
